You can book ahead, but we showed up without pre-booking and were fine. On the Stamford Bridge tour website (the official one, not one of the many resellers who offer tickets), they show how many spots are available at each time slot throughout the day. So we looked at that and saw that we didn't need to pre-book that day, which gave us the flexibility to arrive when we were able to--and also to get the help we needed for one of our party in a wheelchair.
